SPRING KITCHEN SINK SALAD

INGREDIENTS:
*12 oz spring mix or power greens salad mix
*1 cup diced compari tomatoes
*1 cup diced seedless baby cucumbers
*2 apples cored and thinly sliced
*1/4 cup diced red onion
*4 oz blue cheese crumbles (or feta)
*3/4 cup roasted, salted pistachios
*1 TBLSP fresh chopped dill
*1 TBLSP Extra virgin olive oil
*1 lemon zested and juiced
*Salt and pepper to taste

DIRECTIONS:
*In a large mixing bowl, combine salad greens, tomatoes, cucumbers, apples, onion, cheese, pistachios, dill, olive oil,  lemon juice and zest.
*Season with salt and pepper to taste.
*Serve, refrigerate any leftovers.
