High Protein Breakfast Wrap 

This is pure fun!! And so delicious you might do what I did…have it for breakfast 5 days in a row. Using egg whites (Kroger Cage Free 100% Liquid Egg Whites) plus an egg white based wrap (Egglife Southwest Style Egg White Protein Wraps from Sprouts) bumps the protein value of this meal way up. Start the day strong or make it as a post workout meal to fuel your recovery. As is, this recipe provides 23 grams of protein, not including the protein wrap. Feel free to get creative using your favorite fillings such as broccoli, turkey sausage, low fat cream cheese or salmon.  

INGREDIENTS: 

  • 1 wrap 

  • 2 eggs or 3 egg whites 

  • ½ Roma tomato diced, or 6 cherry tomatoes halved 

  • ¼ avocado, diced 

  • 1 – 2 TBLSP low-fat cottage cheese 

  • Handful of baby spinach, chopped 

  • 1 TBLSP BBQ sauce, tomato sauce or marinara sauce (optional) 

  • Salt and pepper 

    DIRECTIONS: 

    1. If using whole eggs, whisk eggs in a bowl and pour into a pan over medium-high heat with cooking oil (so the eggs don’t stick.) Swirl the eggs around to cover the base of the pan. 

    2. Place the wrap on top of the eggs. Fry for 2 minutes then flip and cook for another 2 minutes so the wrap crisps up. 

    3. Transfer to a plate and cut halfway into the wrap. 

    4. Arrange the fillings (avocado, tomato, cottage cheese, spinach) one in each quarter. Season with salt and pepper then fold it up, one quarter at a time. Enjoy!
