Easy Cheesy Potatoes
I feel like plain white potatoes get a bad rap. They aren’t sexy. They totally lack color and personality. They’re high in carbohydrates which makes the most under-informed of us want to steer clear of them. The truth is, plain white potatoes are just misunderstood.
Carbohydrates are a critical fuel for all bodies. In order to function, we need to fuel. Whether you’re a high level athlete, a weekend warrior, or an everyday athlete in the sport of life (like me), your body needs carbohydrates.* Aside from the carbohydrate boost you get from “plain white potatoes” they’re also a great source of potassium, and B vitamins. The skin is a good source of fiber. Toss these in the oven and serve them with a lean protein, and a colorful vegetable.
INGREDIENTS:
· 6 potatoes sliced into quarters**
· 6 thin butter cubes/slices (about 1 ½ tsp per cube)
· 4 garlic cloves, minced
· ½ tsp salt
· ½ tsp pepper
· Dried rosemary, to taste
· Mozzarella cheese, shredded (or your favorite cheese such as Asiago, Parmesan, etc.
DIRECTIONS:
· Cut potatoes into quarters (or eighths if you’re just using 3 potatoes)and set upright in muffin tin
· Place a pat of butter in the center of each. Add garlic. Sprinkle with salt, pepper, and rosemary.
· Bake in the oven for 50 minutes at 360 degrees
· Remove from oven, sprinkle with cheese. Return to oven for 5 minutes to melt the cheese. Serve hot with a lean protein and a vegetable (or two!)
*If you’re diabetic, it’s important to understand the effects potatoes have on blood sugar, and the portion size that’s appropriate. Check with your Doctor or a Registered Dietician.
**Can also use just 3 potatoes. Simply cut each potato in half, and each half into quarters.
