Watermelon Feta Salad

INGREDIENTS: 

  • ¼ C extra virgin olive oil 

  • 2 TBLSP red wine vinegar 

  • Kosher salt 

  • 3 C cubed seedless watermelon 

  • 1 C chopped cucumber  

  • 1 C crumbled feta cheese (about 6 oz) 

  • ½ C coarsely chopped mint, plus more for serving 

  • ½ C minced red onion 

  • Flaked sea salt (optional, for serving)  

3 EASY STEPS: 

  1. In a small bowl, whisk together the oil, vinegar, and kosher salt. 

  1. Place chopped watermelon, cucumber, feta, mint, and onion in a large mixing bowl.  

  1. Pour dressing over the watermelon, cucumber, feta and mint. Toss lightly. Top with more mint and sea salt flakes. Serve chilled.  

Serves 4. Total prep time 10 minutes.
