Turkey Zucchini Burgers
Yep, you read that correctly. Turkey burgers with zucchini. The best part about this recipe isn’t just that it’s fast (10 minutes prep time + 10 minutes cook time) but it also tastes incredible! I cooked mine on the stove top, but now that grilling season is in full swing you might want to cook these guys on the grill. If you’re an air fryer junkie like I am, you can also cook them in the air fryer.
Ground turkey breast is a great source of lean protein. Zucchini is low carb, high fiber, and loaded with vitamins, minerals and beneficial plant compounds. Each burger patty delivers just 161 calories, 4.5g carbs, and 18g protein.
Serve on a multi grain bun with all of your favorite toppings.

INGREDIENTS:
6 oz grated zucchini (when water squeezed out, 4.25 oz)
1 lb lean ground turkey
¼ cup seasoned whole wheat or gluten-free breadcrumbs
1 TBLSP grated red onion.
1 tsp salt
1 tsp pepper
Oil spray
DIRECTIONS:
Grate zucchini and squeeze ALL of the moisture out using paper towels.
In a large bowl, combine ground turkey, zucchini, breadcrumbs, garlic, onion, salt and pepper. Make into 5 equal patties*, 4 oz each so they cook in the center.
To cook on stove top: Heat a nonstick skillet on high heat. When hot, lightly spray with oil. Add burgers to the pan and reduce heat to low. Cook on one side until browned, then flip. Flip over several times to prevent burning and to make sure the burgers are cooked all the way through.
To cook on grill: Clean grill well before cooking and spray with oil spray to prevent sticking. Cook the burgers on medium heat about 5 minutes on each side, or until no longer pink in the center.
To cook in the air fryer: Preheat air fryer to 370F degrees. Cook in a single layer in two batches for 10 minutes. Turn halfway until browned and cooked through in the center.
