Summer Watermelon Salad

There’s still plenty of summer left for us here in Elevate territory! It’s too hot to cook, so a chilled summer salad is perfect. The sweetness of the fruit and the tangy flavor of feta cheese are a match made in heaven. Make a big batch and have some for lunch tomorrow. Enjoy!

INGREDIENTS:

· 4 cups cubed watermelon.

· 1 Italian cucumber, diced.

· 2 cups quartered strawberries.

· 1 cup blueberries (my optional add-in)

· 1 cup feta cheese crumbles

· Black pepper (to taste)

· Light sprinkle of salt

DIRECTIONS:

· Combine the watermelon, cucumber, strawberries and blueberries in a large mixing bowl.

· Add feta cheese crumbles, black pepper, and a light sprinkle of salt. Fold together lightly.

· Serve chilled.
