Shrimp, Broccoli, and Brown Rice Easy Foil Pack Meal

This quick and easy shrimp and broccoli foil packet recipe is perfect for those busy weeknights when you want a flavorful and nutritious meal without the fuss. With a zesty marinade made from low-sodium soy sauce, brown sugar, fresh lime juice, and a hint of red pepper flakes, these packets pack a punch of flavor. The combination of tender shrimp, crisp broccoli, and hearty brown rice, all cooked to perfection on the grill or in the oven, makes this dish a go-to for a delicious dinner in just 25 minutes. Plus, you can prep it the night before for an even faster meal after a long day!

INGREDIENTS: 

  • ½ cup low-sodium soy sauce 

  • 2 TBLSP brown sugar 

  • Juice of 2 limes 

  • 1 tsp crushed red pepper flakes 

  • 2 cups cooked instant brown rice 

  • 1 lb large shrimp, peeled and deveined* 

  • 1 ½ - 2 cups broccoli florets 

  • Sesame seeds (optional garnish) 

 

INSTRUCTIONS: 

  • Heat grill to high, or oven to 400 degrees 

  • In a small bowl, whisk together the soy sauce, brown sugar, lime juice and red pepper flakes until combined. 

  • Cut 4 large pieces of foil into large squares that can be filled, closed, and sealed. Among the 4 pieces of foil, divide rice, shrimp, and broccoli. Divide marinade evenly among the 4 packets. Garnish with sesame seeds (optional). 

  • Fold and seal edges of foil. Grill (12-15 minutes) or bake in oven (20 minutes) until shrimp is pink and broccoli tender.  

*Could also use 2 large chicken breasts cut into 1” chunks  

**These can be made the night before then just toss on the grill or in the oven for a quick dinner after a long day.
