Get Well Soup

“IT” is going around again!

“IT” being the sneezy-coughing-headache-bodyache-fever thing that goes around every year at this time. Maybe you have it. Maybe you’ve had it. Maybe you know someone who has it now. (Make them soup!)

There’s something really comforting about hot soup when you’re not feeling well. I double batched this and froze half of it…just in case “IT” makes it’s way to my house. Make a batch and freeze it. If you’re not feeling well, please stay home and eat soup! Thank to @healthygirlkitchen for the original recipe.

INGREDIENTS:

· ½ yellow onion, diced

· 1 ½ cups chopped carrots

· 1 cup chopped celery

· 1 TBLSP olive oil

· 2 @15 oz, no salt added/low salt cannellini beans (white beans)

· 4 cups low sodium vegetable broth

· 1/8 tsp pepper

· 1 tsp salt

· 1 TBLSP dried dill

· 1 tsp dried thyme

· 1 very generous handful fresh baby spinach

· 2 cups COOKED brown rice, farro, barley, pasta

DIRECTIONS:

· In a soup pot, on medium heat, sauté veggies in olive oil for 5-10 minutes.

· Add in beans, spices and vegetable broth. Simmer for 25 minutes.

· Add in fresh spinach. Simmer until wilted.

· Add in COOKED rice, farro, barley or pasta. (Don’t cook the rice, etc. in the soup because it will soak up all the broth and get too starchy.)
