Air fryer Chicken and Veggies
(Yes, you can cook it in the oven too!)
I’m always on the lookout for meals I can double batch. I can serve what I make for dinner and freeze the other half for a meal after I’ve had a non-stop day. (Anyone else have those?!?!)
@eatinghealthytoday and @fooddolls have come up with this super simple, recipe to get a tasty meal on the table in 30 minutes. We can all use more veggies in our lives, and this brings a strong veggie game. The chicken provides us with lean protein, a must for the athlete in all of us.
Don’t have an air fryer? No worries, it can be roasted in the oven** just as easily!
INGREDIENTS:
· 1 lb chicken breast, cut into 1 inch pieces
· ½ red onion, cubed
· 1 large zucchini, cubed
· 1 red pepper, cubed
· 1 yellow pepper, cubed
· 2 garlic cloves, minced
· 2 TBLSP Cajun seasoning*
· Salt and pepper to taste (I omitted the salt because the Cajun seasoning is pretty salty.)
· 2 TBLSP olive oil
DIRECTIONS:
· Preheat air fryer to 380**
· In the basket of the air fryer, add chicken and all of your veggies.
· Drizzle with olive oil, garlic and Cajun seasoning. Toss well.
· Air fry for 23-25 minutes, stirring ½ way through.
· Serve with rice, farro, cauliflower rice, or on a bed of greens.
*Switch it up by using your favorite seasoning blend instead of the Cajun.
**To roast in the oven, preheat oven to 400. Use a sheet pan lined with tinfoil. Lightly coat the tinfoil with cooking spray or olive oil. Bake for 25 minutes, stirring ½ way.
